Make Veggies Your Lead Guitarist
René Redzepi, the Danish chef and owner of the Fine Dining establishment, ‘Noma’ has no qualms about singing the praises of veggies. He hates to think of them as mere accompaniments to heavy meat dishes or as part of dainty salad dishes meant for the dieting brigade. He hopes to convert hard core meat lovers and stresses his point by simply stating, “they will be “the lead guitarist or lead singer of a meal rather than the garnish.”
Well, with food costs escalating rapidly throughout the world, opting for healthy veggies makes economic sense too. Michael Pollan, the writer sums it up aptly. “Eat food. Not too much. Mostly plants.” And no, a vegetarian fare does not have to be bland or boring. You need not translate it as stir fried tofu all the time. All it takes is a little imagination and some basic culinary skills and off you go creating the music of food in which the veggies are the lead singer not a chorus accompaniment. So think green and eat green for a healthy environment, healthy you and an even healthier bank balance.
