Aspartame, sucralose, acesulfame k and saccharin are some examples of artificial sweeteners but not all are suitable for baking. Of the lot, only sucralose stays stable when exposed to high temperatures and does not give a bitter aftertaste like the others do. Safety studies on such sweeteners are not satisfactory and hence natural sweeteners are preferred. These have calories similar to sugar and need to be used in moderation. 1. Rapadura

It is made from sugarcane juice and is an unrefined sweetener. It barely undergoes any amount of processing and is made by boiling the juice obtained from a fresh sugarcane. All the water is removed and the end product is poured into molds of desired shapes and cooled to form a brick. The quantity needed for cooking is grated as and when needed. 2. Blackstrap Molasses

It is rich in minerals like iron, calcium and magnesium and is nutrient dense. It has a very strong flavor and should be used in small quantities only.

 


3. Evaporated Cane Juice

It is called unrefined sugar in many parts of Europe and is made from sugarcane juice. It is a better health option as it contains small amounts of a vitamin called niacin that refined sugar lacks. It does not impact the color or flavor of foods that it is incorporated into and hence is very widely used. 4. Date Sugar

This, as the name implies is obtained from dry dates and makes for a very sweet ingredient. Apart from iron, it contains substantial amounts of zinc, selenium and phosphorus which perform important body functions. They help regulate blood pressure levels and increase natural immunity. A date syrup can be made at home by soaking a cupful of dates in warm water and blending it into a paste.
