MushroomFood safety especially concerning mushrooms is a serious issue since there are many ill effects of eating rotten mushrooms. They give rise to more than just an upset stomach. In some individuals serious food poisoning may also be the result. Steps have to be taken to prevent spoilage  of mushrooms right from the farm level to the time it is ready for consumption. Causes Of Spoilage


  • Bacterial contamination can occur during transportation or storage.


  • If the compost added in fields is contaminated, it leads to bacterial growth.


 


Health Problems Caused By Rotten Mushrooms


  • Botulism is a serious disease that can be caused if mushrooms are contaminated by a bacteria called Clostridium botulinum. This bacteria survives without oxygen and is found when mushrooms are stored in airtight packets at room temperature. Children are more prone as their immune system is underdeveloped.



  • Symptoms are seen after 12 hours of eating. The toxin produced by the bacteria causes paralysis of facial muscles. It causes eyelids to droop and disrupts vision. There is trouble with swallowing and talking. As it spreads it makes breathing difficult and can lead to failure of the respiratory system. Untreated it can lead to coma and death.



  • E coli contamination can cause diarrhea, nausea and vomiting. This can occur if mushrooms have been in contact with unclean water during cultivation.



  • Salmonella bacteria grows if there has been improper handling of mushrooms during cooking. Symptoms are abdominal cramps, fever and diarrhea.


 


Tips To Identify Rotten Mushroom


  • Buy only those that are not bruised.



  • Do not buy if mushrooms were stored at room temperature.



  • Discard mushrooms with molds on the surface.



  • Check the expiry date on the packet to know the freshness.
