Causes Of Spoilage


  • If cooked potatoes are not refrigerated promptly they have a higher chance of getting spoilt.


  • If the potato skin is wrinkled and soft, it is easier for disease causing bacteria to enter.




 


Health Problems Caused By Rotten Potatoes


  • Salmonella poisoning can occur if contaminated potatoes are eaten. This is common if the potato has been at room temperature for more than two hours. The symptoms are nausea and vomiting. Diarrhea with blood is also noticed.


  • A bacteria called Shingella grows commonly on potato salad. This bacteria is present in human feces and can spread if adequate hand washing has not been done. It causes headaches, pain in the abdomen and watery stools with blood in them. Fever and chills are also common. The Effect is seen after 48 hours of eating the spoilt food.


  • If the potatoes were not washed well enough to remove the dirt and grime, you may find E coli bacteria on them. These dangerous bacteria release toxins which may cause damage to the kidney. In milder cases, it leads to diarrhea and formation of excess abdominal gas.


  • Staphylococcus bacteria if ingested from improperly cooked potatoes can cause fever and chills . One may also encounter low levels of blood pressure.



Tips To Identify Rotten Potatoes


  • While buying look for potatoes with smooth, bruise free and intact skin.


  • Leftover potatoes must be used within 72 hours after refrigeration. It is best to wrap well in food grade plastic or foil wrap.


  • Use a thermometer to check if the internal temperature is close to 140º F.


  • Store raw potatoes in a cool, humid free place.
