When the bikini season is around the corner, most of us yearn for a bowl of salad. Here are some of the quick n easy salad recipes that you can try out to beat the summer heat.


Strawberry Mango Mesculan SaladStrawberry-Mango Mesclun Salad

This summer salad can be easily made with handful of ingredients. It takes only 15 minutes to prepare this salad.

1/2 cup sugar

3/4 cup canola oil

1 teaspoon salt

1/4 cup balsamic vinegar

8 cups mixed salad greens

2 cups sweetened dried cranberries

1/2 pound fresh strawberries, quartered

1 mango - peeled, seeded and cubed

1/2 cup chopped onion

1 cup slivered almonds
Method of preparation: Mix salt, vinegar, sugar, and oil in a jar. In a large bowl mix salad greens, strawberries, dried cranberries, mango, and chopped onions. Garnish with slivered almonds.


Green Pepper Tomato SaladGreen Pepper Tomato Salad

This is said to be the keeper of all salads. It can be easily prepared within 15 minutes.

3 medium tomatoes, seeded and chopped

1 medium green pepper, chopped

1 celery rib, thinly sliced

1/2 cup chopped red onion

1 tablespoon sugar

1/2 teaspoon salt

1/8 teaspoon pepper

2 tablespoons cider vinegar
Method of preparation: Mix up vinegar, sugar, salt and pepper in one bowl and tomatoes, green pepper, celery and red onion in another bowl. Once the vinegar mixture is properly mixed up, add it to the tomato mixture, stir, cover and refrigerate for 2 hours.


Green Pepper SaladGarden salad with fruits

This is a perfect garden salad made of different kinds of fruits pieces, cooked sugared almonds, and vinegar and oil dressing. It takes around 20 minutes to prepare this salad.

1 cup slivered almonds

1/2 cup white sugar

1/2 cup olive oil

1/4 cup distilled white vinegar

Salt and pepper to taste

1/2 head iceberg lettuce - rinsed, dried, and chopped

1/2 head leaf lettuce - rinsed, dried, and chopped

1 cup chopped celery

1/4 cup chopped fresh chives

1/2 cup mandarin orange segments, drained

1/2 cup sliced fresh peaches

1/2 cup diced mango

1/2 cup chopped fresh strawberries

2 tablespoons white sugar

1/2 cup dried, sweetened cranberries
Method of preparation: Sugared almonds can be prepared by cooking almonds and sugar over a medium flame for 5 minutes. In a bowl mix all the fruits and in another bowl mix sugar, salt, pepper, olive oil and vinegar.


Potato Salad

This traditional potato salad can be cooked within 2 hours. This salad will be an instant hit at any given time.

5 pounds potatoes, peeled and chopped

10 eggs

1 large onion, chopped

1 (24 ounce) jar sweet pickles, drained and chopped

2 cups mayonnaise
Method of preparation: Cook the potatoes in large pan of water for about 12 minutes, and then allow them to cool.  After cooling, peel and chop potatoes and transfer them to a bowl. Cook eggs, cool them, shell them, and chop them. Place the chopped eggs in a bowl. Add onion, sweet pickles and mayonnaise to the eggs and stir them continuously till they mix properly.  Then chill them in refrigerator. Allow them to blend properly for half an hour and then add chopped potatoes, and refrigerate for another half an hour. Serve cold.

 
Raspberry Spinach Salad Raspberry Spinach Salad

The sweet raspberry dressing serves as an ideal topper for spinach, kiwi, nuts and fresh fruits. This salad can be prepared in 25 minutes.

3 tablespoons vegetable oil

2 tablespoons raspberry vinegar

2 tablespoons raspberry jam

1/8 teaspoon pepper

8 cups torn fresh spinach

2 cups fresh raspberries, divided

4 tablespoons slivered almonds, toasted and divided

1/2 cup thinly sliced onion

3 kiwifruit, peeled and sliced

1 cup seasoned salad croutons
Method of preparation: Mix oil, vinegar, jam and pepper; in tight fitted lid jar. Combine spinach, 1 cup of raspberries, 2 tablespoons almonds and onion in a salad bowl. Top with kiwi, croutons and remaining berries and almonds. Drizzle with dressing; serve immediately.
